Sardinian Oil

It's not just a name, but an ideal connection between the territory that surrounds us and our production.

"Corax", which in Latin means sea rook/raven or cormoran, - a type of sea-bird still very common in the bay of Alghero - is the name that the Romans gave to their second century A.D. settlement, built less than two kilometres from what is now the outskirts of town, in an area these days called "La Purissima", which is notable for the presence of many hectares of olive groves, managed and cultivated by our Farm Company.

 

FRUITY

CORAX Fruity extravirgin olive oil belongs to the category of medium fruity. It is obtained from a mixture of oils made from the different types of olives harvested in our Farm Company, and is characteristic for its fragrance of olives ripened to the right degree, with notes of bitter almond, artichoke and thistle, and for a correct balance with an aftertaste of bitter and pungent. It's aimed at satifying the most demanding palate.

It is made from only one variety of olive, the Bosana, being meticulously attentive to the discipline of production, which lays down precise rules in order to achieve a final product that is genuine and of very high quality.
It belongs to the category of intensely fruity, characteristic for its fragrance of green olives, with notes of artichoke and thistle, and for a balanced taste, with strong bitter and pungent notes.
